Description

The first sake with ultra-flat grinding technology

Daishichi Minowonmon is the first sake brewed by Daishichi Sake Brewery using the ultra-flat grinding technology and based on the unripe brewing method. It belongs to the pure rice Daiginjo, and the rice selected is "Yamada Nishiki". The ultra-flat grinding technology completely removes the miscellaneous flavor components remaining in the traditional Daiginjo refined white rice, so that Daishichi Minowonmon has a refreshing and smooth taste and a fresh aroma.

The flatness of the polished white rice ground by ultra-flat grinding technology even exceeds the theoretical value proposed by Saito Tomio, the founder of the flat grinding theory, and was praised by Saito Tomio as his ideal polished white rice. After the great success of the research and development of Daishichi Minowonmon, Daqichi Shuzo completely abandoned the traditional grinding method and began to fully adopt the ultra-flat grinding method.

Daishichi Minowonmon won the gold medal in the ginjo wine unit and the junmai wine unit and the comprehensive evaluation gold award in the Tohoku Appraisal, and was praised by world-class judges at VINEXPO, the world's largest beverage fair held in France, and top restaurants in New York.
