「農口尚彥」先生是吟釀酒和復興「山廢」釀造方法的最大推動者。曾經釀造過許多金賞清酒年過80的他，不但獲得了厚生勞動省指定的釀造行業的最高榮譽。在兩次退休後，2017年因無法忘情釀酒再度復出，以84歲高齡再度挑戰釀酒，並開設「農口尚彦研究所」，他對超越自我的釀酒追求，令品牌成功引起了社會各界的關注和讚譽，是位日本的傳奇杜氏。

「農口尚彥」先生追求超越自我的釀酒挑戰備受各界矚目及好評，日本的職人精神是一種無止境追求的態度，追求的不僅是技藝的純熟，更是超越自我及挑戰極限，不斷尋找全新的可能性，可以說職人精神就是日本創新能量之所以豐沛傲人的祕密所在。

具有多種香氣和複雜濃鬱的果味，包括蜜瓜、油桃、黃油和穀物。

口感滑順帶有明顯的乳酸感，層次感豐富，濃鬱的鮮味和礦物質、透明的口感以均衡的方式在整個口中蔓延，並帶有輕微的揮之不去的宜人苦味，使其具有良好的結構風味。

其風味能充分帶出食材的原味，是佐餐的絕佳飲品。
