風の森 25周年記念未来予想酒II 「高温発酵の世界」720ml

1998年「風の森」的誕生，2023年「風の森」為了紀念這次25週年而釀造「未来予想酒II - 高溫發酵世界」。

油長酒造株式會社第十三代山本長兵衛：

現代清酒釀造通常利用冬季低溫發酵，過程中微生物的作用來產生風味，但這從江戶時代就已經存在了。

在此之前，即使夏季溫度接近攝氏 30 度，清酒也能釀造。

「風の森」預測25年後，風之森將能夠自如地操控中世紀式的高溫發酵和現代的低溫發酵，表達出多層次的香氣和風味。

散發出一種將葡萄和香蕉混合的水果香，當溫度升高時，桃子般的細微味道開始散開。

口感上有清爽的酸、富有成熟水果的甜味最終會增加，酸度最終會被甜味覆蓋。

產地：日本奈良縣油長酒造

精米步合：90 % (秋津穂)

酒精度：14 %
