鷹長純米大吟醸出品酒 720ml

24年來首次挑戰：《國家新酒鑑定》《使用7號酵母》

此次，本廠時隔24年首次參加全國新酒評鑑會。

一般來說，新酒鑑定協會往往會評價香氣濃鬱、口感順滑的清酒。

風之森一直使用的7號酵母的酸度很高，己酸乙酯很少，被認為是華麗的吟釀香氣之一，因此人們認為獲獎是非常困難的。

使用已經使用多年的7號酵母，釀酒師想挑戰一下我們多年來培養的清酒釀造如何，例如使用超硬水進行長期低溫發酵。

此次展出的清酒是來自兵庫縣的35%山田錦精米。

採用超硬水，使用風之森 7號酵母進行長期低溫發酵而成。

具有讓人想起白葡萄和草莓的優雅淡香，以及高級精製白葡萄酒特有的透明細膩的口感。

這次我們展示的是釀造的清酒，出於對前輩的尊重，我們決定將其作為高町純米大吟釀。

雖然這是經過巴氏殺菌的產品，但為了保持質量，將採用冷藏運輸方式運輸。
