Akkeshi 厚岸丹頂鶴 Single Malt Japanese Whisky 2022

Deep fog, fresh tidal air, rich peat. We believe that the climate of Akkeshi, Hokkaido will create the unknown Japanese whisky flavor we seek. We started distilling in 2016. Just like the whisky made on Islay, we use water that passes through the peat layer as brewing water. The whisky is brewed in Akkeshi. The area around Akkeshi is rich in peat deposits, which are essential to the flavor of whisky. The diverse terrain of the sea, mountains and swamps allows for the collection of peat at each location. There are different flavors. Using traditional Scottish methods to make whiskies similar to Islay malts is due to the desire to "produce whiskies with a flavor similar to Islay, so traditional Scottish methods are used." The equipment was installed by Forsyths in Scotland, and all the construction work was done by craftsmen from Forsyths visiting Japan! The still is a tall upright still with an onion-shaped bottom, and looks similar to most stills used in Islay distilleries. Heating is done through a heating system. The additional condenser is a shell and tube condenser, and the saccharification tank is a semi-exposed type! The fermentation tanks are made of stainless steel and the temperature cannot be adjusted because the craftsmen believe that the fermentation time must follow nature. In addition to the two dunnage type distilleries, another innovative rack-type distillery was opened in February 2018. The fourth rack-type distillery located on the hills of Akkeshi Bay will be completed in April 2020! The ocean smell in the air will also have a great impact on the characteristics of whisky!
