Azienda Agricola Sciara 980 metri 2021

Opened by Hong Kong-born Stef Yim, Sciara Winery is hands-on winemaking and definitely one to look out for and appreciate.

Sciara wine comes from Italy's Sicily's Etna Volcano vineyards, located at over 3,500 feet above sea level, a location that allows for the cultivation of better quality grapes.

Grapes are grown at high altitudes, avoiding pest invasion and growing without grafting, and are done by hand in the most natural way, so that grapes can grow healthiest and more old vines can be cultivated.

No chemical fertilizers, pesticides and herbicides etc. are used.

Tasting notes: Complex nose of black plums, wood moss, wild mushrooms and dried fennel. The

mouthfeel is smooth and fresh with a core of supple tannins supporting the cherry, rosemary and

spearmint flavors in a stony way…it truly is a journey of joy from the start to the long finish!

Recommended pairings: Roast chicken, wild boar or lamb chops etc.
