Our idyllic high-altitude, geologically complex vineyard is enhanced by the most exacting no-shortcuts natural practices. Hand-picking and double-sorting result in deliberately tiny yieds and superlative fruit quality. Small cuvées in the state-of-the-art gravity-fed winery, and meticu-lous assemblage ensure that our wines are hand crafted in our family's unwavering pursuit of purity and quality in winemaking. Our front label tells the story and philosophy behind Chene Bleu wine
VIOGNIER
Barrel-fermented high-altitude 100% Viognier.
Aromas of dried apricot and honey, with brioche notes and a hint of pears in syrup. Suave and fresh on the palate, it balances flavours of peach and verbena, with a long finish.
Ideally matched with white fish with cream sauce, poultry, or blue cheese, or can be enjoyed on its own. Serve slightly chilled at 14°C (57°).
Tasting Note
As grapes go, Viognier is more finicky than most. Too much sun sends the aromatics into overdrive, while too little can yield wines nearly devoid of character. But once again, owing to our altitude and extreme diurnal range, we are able to thread the needle, crafting a wine with voluptuous texture, fresh acidity and beguiling aromas of flowers and honey. Indeed, a veritable ‘tip of the hat’ to the Viogniers of the Northern Rhône. Our elegant and fresh Viognier that shows the juxtaposition of being in the hot south at high altitude. Perfect for aperitifs. Also pairs excellently with poultry, fried foie gras, white fish with crème, fresh ceviche, seafood tartare or blue cheeses.
