Taste

On the tongue salty, a fascinating combination of green, yellow and orange citrus notes, some stone and pome fruit, almonds, rock salt and white pepper determine the taste picture. The minerality is exciting, the acidity holds the tension from beginning to end and the texture is seductively creamy, yet finely marked by the phenolic.

Wine profile

The name Côte aux Prêtres, or "Priest's Hill", reflects the vineyard's proximity to the pilgrimage route from Vézelay to Santiago de Compostela. This unique vineyard is located on a hill whose dome shape exposes it to both sunlight and wind. The soil is rich in small Kimmeridg limestones. After the hand harvest, the grapes were gently pressed and subjected to a long, natural fermentation. The Côte aux Prêtres matured in tanks and large wooden barrels, remaining on the fine lees. The finished Chablis was bottled without filtration and clarification, with only a small addition of sulphur.
