From the most mysterious Orkney winery in the north of Scotland, the belief in winemaking comes from the insistence on tradition. One of the few distilleries that insists on still using the traditional, expensive and laborious hand-turned malt, which is one of the reasons why it has been able to produce such a rich and unique whiskey for more than two hundred years. The aromatic peat is selected from the banks of the Hobbister Moor. The peat in this area was formed about 9,000 years ago. It is younger than the peat in the Islay area. The peat layer is about 4 meters deep. It is mainly formed by heather and its underground roots. Therefore, the peat here has an unusually rich and special aroma of heather. It is the key to adding aroma to the liquor. Aging at constant low temperature, geographical location is another important factor that highlights the characteristics of whiskey. The special climate on Orkney Island, with a year-round temperature between -4 and 14 degrees Celsius, lacks extreme climates that are too hot or too cold (compared to other parts of Scotland) to produce a balanced aging effect.

Nose:Yellow apple, heather, slight leathery notes and smoke, followed by fresh notes of lemon and seaweed.
Palate:Salted apple, light pepper spice, peppery and woody tones, more smoke and honey sweetness, a little apple and sea breeze.
Finish:More spice and smoke, with a salty taste, comfortable and long.
