KUHEIJI 久野九平治本店 黑田庄町田高 2019 720ml

「萬乘醸造」Domaine Kuheiji 成立於 1647 年，同時擁有日本酒和葡萄酒的「ドメーヌ」，並且在世界舞台上挑戰。創辦人釀造「醸し人九平次」15年後，2013年赴法國開始做酒，因為跨界融合能帶來創新，突破傳統思維。這樣的經驗混合，正是他們創造新價值的關鍵。

黒田庄是《九平次》專門生產高階日本清酒，酒莊位於兵庫縣，使用有「酒造好適米之王」之稱的山田錦釀造清酒，而兵庫縣所種植之山田錦被公認為全日本最好。

大部份酒造都會強調清酒的釀造工藝如精米步合、法定等級 (吟醸、大吟醸)、生酛、無濾過等等，但黒田庄放棄此傳統，卻如葡萄酒般標示出年份，不用傳統的清酒酒瓶而改用香檳酒瓶，不用金屬旋蓋而用軟木塞。所有釀成的清酒均保存於酒瓶內。以上種種均令到黒田庄清酒擁有長達6年以上的陳年潛力。

展現不同的「風土」魅力：
🌾田高（Tako）：地勢平坦、肥沃，日照充足，晝夜溫差明顯。土壤黏土與砂平衡，米的營養集中，釀出的酒味道濃郁有力。

酒色淡雅像翡翠，帶有柑橘、青蘋果和香草的清新香氣，還有米的礦物感。口感爽快、酸度高雅，米香與酸味平衡，餘韻清新俐落。🍏
建議稍稍冰鎮後10～15℃飲用。2019是清酒熟成高峰期較久的一年。
