「風之森」使用多種酵母釀造清酒。考慮到所需清酒品質與風之森水之間的兼容性,所得出的結論是,最佳酵母是7號酵母。

7號酵母:
從那時起,近20年來,我們一直只使用7號酵母進行釀造。
7號酵母是1946年由大蔵省釀造試驗場的山田正一氏發明的。它是在長野縣一家釀造著名清酒的清酒釀酒廠中發現的,被稱為“現代日本清酒的基礎”。

6號酵母:
酵母6號是在1930年由國家稅務局工程師 - 小穴富司雄氏先生發現的,比7號酵母發現16年。
是在釀造秋田的新政清酒釀酒廠中發現的。
發現的聯合酵母,所有這些都被發現是6號基因突變。

風之森生產的6號酵母具有很強的低溫發酵能力。
我想向您介紹新政酒造 的佐藤祐輔先生,我有幸與他在過去的10年裡加深了友誼。

我們收到了 6 號酵母,並將 20 年來首次使用 6 號酵母作為風之森。並發行「風の森ALPHA6 6号への敬意」。

由於酵母在低溫下也能保持活性的特性以及我們獨特的發酵罐,
醪在低溫下長時間發酵,以帶出濃鬱的風味成分。
此外,得益於金剛葛城山脈的超硬水,酒液質地濃稠,味道溫和,在口中縈繞不去。


有青瓜、葫蘆絲般的溫柔醇香,口感帶溫柔的甜味和酸味在你的舌頭上蔓延。質地柔軟、香氣濃鬱。

真中採り:是指在沒有壓榨機壓力的情況下,清酒中會滴落的部分。
