Azienda Agricola Sciara 酒莊位於意大利西西里島火山下，由香港出生的釀酒師 Stef Yim 主理，由種植、採收、發酵釀製等，過程上每一個工序都親自負責。

葡萄園地理位置類近火山及處於高海拔，所以泥土充滿豐富礦物外，亦能避開 Phylloxera 寄生於葡萄的害蟲入侵和不用接枝生長，從而葡萄得以最健康成長和培植更多老樹藤。

Stef 的釀酒方式屬於純自然，他在 Etna 擁有九塊田，合共 10 公頃，種植葡萄面積共 5.9 公頃，海拔 630 至 1520 公尺，同時他只用自己種植的葡萄釀酒，絕不買入其他農民的葡萄，所以葡萄酒物質完全能夠由自己掌握。
