Chichibu white leaves are not chilled and filtered, not colored with caramel. It comes from a family winery with a history of more than 300 years. Mr. Hido returned to Chichibu, Saitama Prefecture to rebuild the Hido Ichiro Winery, even if it is the youngest wine in Japan factory, but every whisky produced is amazing. Ichiro traveled all over the world to find the best oak barrels, blended Hanyu old wine and Chichibu new wine, and then left it to mature. It is made with malt whisky produced by the Hanyu Distillery in the grandfather's time; after adding ice cubes, the taste of the grain is slightly sweet and the aroma is more delicate. This whisky is blended by Hito Ichiro, founder of the Chichibu Distillery. He travels widely to find the perfect cask to blend his Hanyu Single Malt and Chichibu Single Malt.
Ichiro Akuto, founder of the Chichibu Brewery and one of Japan's most respected brewers, is also a seasoned brewer. Ichiro's Malt WineWood Reserve blends malt whiskys from Chichibu and the shuttered Hanyu distillery (decreasing numbers each year), as well as Scotch whisky.
On the other hand, Chichibu's style is just like the name of its parent company Venture Whisky. It is a distillery that is adventurous and innovative, and will try different methods to distill and age whisky, such as using sake barrels to distill and age whisky. Aging, using barley malt produced in different places as raw materials, etc., are all aimed at making better whisky and exploring the unique style of Chichibu whisky.
When the distillery was demolished in 2004, he saved about 400 barrels. In 2008 he opened a new distillery called Chichibu, and the Double Distilleries are vats of two whiskys: Sherry Matured Hanyu and Chichibu New Made from Japanese oak barrels. In 2010, a batch of malt whisky named Ichiro’s Malt with red leaf, gold leaf and green leaf was produced, as well as blended whisky with white leaf and brown leaf. A few of the 400 casks left by the grandfather in appropriate proportions are added to this batch, bringing the efforts of three generations into one.
