Estate & Wine Overview
Cervaro della Sala 2023 is one of Italy’s most prestigious white wines, produced in Umbria at the historic Castello della Sala estate—run by the Antinori family. Named after the Monaldeschi della Cervara family, this flagship wine blends Chardonnay with a small proportion of Grechetto, aged and vinified with modern and classic techniques since its inaugural vintage in 1985

Winemaking & Style
Grapes are harvested at night or early morning to preserve freshness.
Chardonnay ferments and ages in French oak barriques (225L) for about 6 months, partially undergoing malolactic fermentation; Grechetto is vinified separately without oak.
The final blend is assembled, then bottle-aged several months before release

Tasting Notes
Color: Pale straw yellow with greenish highlights.
Aroma: Acacia blossom, bergamot, citron, ginger, subtle buttered bread, and flint; complex and refined.
Palate: Fresh, vibrant acidity, medium- to full-bodied, with flavors of vanilla, lemon butter, hazelnut, spice, and a persistent, mineral-driven finish.
Aging: Delicious upon release with the potential for 5-10 years of cellaring.
