The Sciara winery was established by Stef Yim, who was born in Hong Kong and personally oversees the winemaking process. It is definitely a winery worth noting and appreciating.
Sciara wines come from vineyards on Mount Etna in Sicily, Italy, located at altitudes above 3500 feet. This geographic location helps in growing higher quality grapes.
The grapes grow at high altitudes which protect them from pest infestations and allow them to grow on their own roots without grafting. The vineyards are managed by hand with the most natural methods possible, allowing the healthiest growth and preservation of many old vines.
No chemical fertilizers, pesticides, or herbicides are used.
Sciara 760 metri
The significant influence of altitude on the wine is demonstrated by blending the Cru Sciaranuova and Cru Taccione, which are located at similar altitudes. All vineyard work is done by hand naturally, with no irrigation or chemical treatments. Due to Etna's limited cultivable area, production is very limited but of high quality.
Tasting Notes:
Initial aromas of crushed stone and dried berries. The wine slowly develops hints of fresh cherries, pine, and chestnuts. It is a rich wine with lots of liveliness. The enticing flavors of pepper, mulberries, and sea salt-like minerals echo black fruits, finishing with a woody note. It requires patience and time to settle.
