Azienda Agricola Sciara Etna Centenario Rosso 2019

Opened by Hong Kong-born Stef Yim, Sciara Winery is hands-on winemaking and definitely one to look out for and appreciate.

Sciara wine comes from the Etna volcano vineyard in Sicily, Italy, located at an altitude of more than 3,500 feet above sea level, and its geographical location helps to grow better quality grapes.

Grapes are grown at high altitudes, avoiding pest invasion and growing without grafting, and are done by hand in the most natural way, so that grapes can grow healthiest and more old vines can be cultivated.

No chemical fertilizers, pesticides and herbicides etc. are used.

Made from vines over 100 years old. The word "Centenario" means someone who lived more than 100 years.

This is a wine that truly brings out the full potential of the volcanic soil and grapes.

It’s a lovely textural wine with red cherries and wild strawberries, showing nice energy and purity with grainy, stony detail. Really nice complexity here. There’s a rich core to this wine, which shows great concentration of flavour.

Suggested pairings: Roast pork knuckle, pasta with truffles, crispy suckling pig skin, etc.
