Billecart Salmon Blanc de Blanc Grand Cru Extra Burt 

Billecart-Salmon Blanc de Blancs Grand Cru Extra Brut is a top-tier pure Chardonnay Champagne from the five Grand Cru villages of Côte des Blancs (Avize, Cramant, Chouilly, Mesnil-sur-Oger, and Oger). It features an extremely dry, mineral style, suitable for seafood and delicate dishes.

Grapes: 100% Chardonnay, a blend of two vintages (the most recent batch approximately 77% 2017 + 23% 2016), plus 20–50% reserve wine.

Vineyards: Low-temperature stainless steel tanks, no oak barrel aging, 4–5 years with yeast, low-dose Extra Brut (approximately 1–7 g/L), 12% ABV.

Characteristics: Fine bubbles, vibrant minerality, aging potential 6–8 years.

Aroma: Pure minerals + white flowers, fresh butter, bread, lemon, green apple, with a hint of almond and white peach sweetness.

Palmistry: Golden with green reflections, ultra-fine bubbles, creamy texture on the palate with a chalky mineral bite, layers of citrus, almond, and lemon peel, clean and lingering finish with a salty umami.

Style: Elegant and refined, with racy acidity; not a heavy, fruity burst, but rather a gastronomic champagne.
