Description
The heart of this Pinot Noir is found in the place called Premier Cru Aux Fourneaux in Savigny-lès-Beaune, supplemented by part of a neighboring place, generally classified as village wine. As a result, the "premier cru" appellation is missing in the 2018 vintage. This estate, which extends approximately three kilometers northwest of Beaune, occupies a considerable area in the wine-growing region with 383 hectares. Domaine Chandon de Briailles owns 1.68 hectares facing east in the place called Premier Cru Aux Fourneaux. The soil is rather clayey and deep, with a limestone layer in the upper part. Natural fermentation took place in wooden barrels, largely with whole grapes. Then the wine was transferred solely by gravity into barrels and barrels with a parsimonious amount of new wood, where it was kept intact for approximately 14 months. During bottling, a minimum of sulfur was added, directly from the barrel.

Aroma : The characteristic note of this wine is based on the deep clay soil of the place called Aux . Here, a warm aroma blends into sweet scents of ripe raspberries, plums and sweet cherries, and blends into peony, cinnamon and darker notes of olive tapenade and dry undergrowth. Even though it reflects the premier cru from the neighboring Les Lavières vineyard, overall it seems a little deeper, darker and slightly woodier.
The Aux Fourneaux 2018 wine takes up the tradition of its predecessors and immediately impresses with its silky texture, sweet black fruit and impressive juiciness. The tannin gives a soft, melting impression, partly like milk chocolate, partly like bitter dark chocolate. With its aromatic notes of black, juicy and fleshy fruits, this wine from a deep terroir forms, with its lively acidity, a captivating whole. Despite its powerful nature, the 2018 vintage remains fresh and almost alive. This wine is already showing its full presence and promises potential for the next decade.
Dishes to pair with wine
Taste Aux Fourneaux 2018 with a succulent grilled ribambelle steak, accompanied by a mushroom rösti and an onion sauce. This wine is also essential to accompany a wild duck breast with a sage sauce and creamy polenta or a succulent chicken breast with a strong mustard sauce and seasonal vegetables.
