Hakushu Distillery was founded in 1973. The distillery is located at a high altitude (708 meters). The climate is cooler than that of Yamazaki, but the temperature difference between day and night is large, especially in summer.
Fifty years after Shinjiro Torii built Japan's first distillery (Yamazaki), in order to diversify Suntory's malt whiskys, they decided to choose a completely different environment to build a second distillery; after After years of hard work, the location was selected at the foot of Kai-Komadake in the Southern Alps.
Hakushu Distillery History
In 1973, the 50th anniversary of Suntory's whisky making, the second distillery "Hakushu" was born. Hakushu Distillery is one of the few distilleries in the world that is located in a highland area. It is adjacent to two national parks in Japan. Therefore, natural environmental protection was particularly taken into consideration when it was built, so that the distillery can be integrated with the natural environment. Here, as the seasons change, whisky wanders through time, and wild birds also show different postures, giving this place the reputation of "the sanctuary of wild birds." There are hundreds of thousands of barrels of malt liquor distilled and matured in this rich natural environment. After careful selection from this huge amount of malt liquor, the single malt whisky "Hakushu" was finally born in 1994.
The smoky flavor of Hakushu Malt Liquor comes from malt dried with heavy peat from Scotland. It uses the famous water from Japan's 100 Selected Famous Waters in the Southern Alps and the Oshiro River, and is fermented in wooden barrels. It is distilled using direct fire and placed in a storage warehouse in the forest to wait for maturation. While waiting, the fruity, sweet and smoky flavors gradually emerge, completing the refreshing taste.
"Hakushu" has a completely different personality from "Yamazaki", and its refreshing flavor that makes people feel like a forest is its charm. Both Hakushu and Yamazaki distilleries are equipped with several stills of different shapes, which is also a rare distillery equipment in the world. Therefore, Suntory can make and produce a variety of malt liquors with rich and colorful characteristics, from light type to heavy type, and is leading the single malt trend. As the leader of Japan's top whisky, Suntory has led Japanese whisky onto the world stage.
