Richard Geoffroy applies his Champagne blending experience to sake, combining multiple rice varieties (such as Yamadanishiki, Omachi and Gohyakumangoku) and different yeasts. The rice is polished down to 35%, no brewing alcohol is added, and the sake is matured in bottle to create a richly layered flavour profile.
Aroma: Opens with pear and plum, accompanied by fresh green notes and the warm nuance of toasted rice, with nori and a hint of cocoa adding depth, giving a freshness underpinned by gravitas.
Palate: Smooth and linear, with fruit, floral and marine elements naturally interwoven. After some air, it shows a creamy brioche‑like texture; the finish is long and textural, with all five tastes (sweet, bitter, sour, spicy and umami) in harmony from start to end.
