The Uncharted Whisky Company was founded by partners; Jack Breslin and Dana de Vos. They have been working for years in Scotland’s booming drinks industry across what seems like countless different roles. However, they've now settled on doing exclusively that which they love-indy bottling of cracking whisky.
The company select exceptional spirits and marry them with exceptional casks to create off the grid bottling for our customers. Everything it bottle has passed the Jack and Dana test. Everything is done by hand and in tiny batches.
Braeval Distillery sits atop Speyside and indeed the Scotch Whisky world. It is the highest distillery in Scotland (pipping Dalwhinnie by a mere 2 metres)- hence the name given to this vatting of these 2 sisters barriques. In the tiny village of Chapeltown, near Ballindalloch the distillery was built in 1973 and originally named ‘Braes of Glenlivet’. This was a great name (in our humble opinion) given its location on the braes of Speyside however, due to the ensuing confusion with Glenlivet distillery, it was renamed in 1994 to Braeval.
The malt springs from some very tall and slender pot stills which make for a light and delicate spirit which is why the spirit has been used consistently (and with good reason) in production of global blend brands such as Chivas Regal. The same light character has paired beautifully with the Oloroso sherry barriques maturation.
We love working with these whiskies that often end up in blends becauseif you want to try them in their best guise- small batches of spirit in great wood- you have to come to the indie whisky world where Uncharted and our peers thrive.
This iteration of Braeval is stunningly rich with notes of chocolate, sticky toffee pudding, and melted vanilla ice cream blend into spiced clootie dumpling finish.
Tasting Notes:
Nose:
A classic sherry bomb. Bright and fruity distillate lying under the cover of rich butterscotch and sticky toffee pudding.
Palate:
Rich and generous with sticky dates, cinnamon swirl pastry and melted vanilla ice cream.
Finish:
Gentle and slow to leave with butterscotch oozing off the palate to reveal oak and the waft of a spice cupboard.
