Winery and Brand

Athénaïs de Béru is the manager of the prestigious Château de Béru in Chablis, renowned for its organic and biodynamic farming practices, emphasizing hand-harvesting, natural yeasts, long aging, and minimal intervention in winemaking.

Les vins d’Athénaïs is her personal wine series, crafted using Château de Béru's facilities and philosophy; although registered as a Bourgogne AOC, its terroir and winemaking philosophy bear a strong Chablis/Yonne character.

Terroir and Winemaking

The grapes are sourced from plots surrounding Saint-Bris and Côte d’Auxerre, with Kimmeridgian limestone soils, 
the same limestone base as the top terroirs of Chablis.

The wines are hand-harvested, fermented with natural yeasts, unclarified, unfiltered, and with minimal sulfur; free from heavy oak influence, they retain a transparent, natural, and energetic expression of terroir. Flavor Profile: The aromas are dominated by green apple, lemon, white peach, white flowers, and a touch of citrus peel, with a distinct limestone and salty minerality.

The 2022 vintage features riper fruit and a rounder texture, but the acidity of Northern Burgundy keeps the wine bright, crisp, and full of tension. On the palate, it offers citrus, crisp fruit, and a slightly salty minerality, finishing cleanly, long, and with a limestone bitterness.

French wine merchants describe this wine as a "monster of the Bourgogne AOC": amazing minerality, unripe fruit, energetic, tight, and powerful on the palate, maintaining its minerality and vitality from start to finish.
