Description

Intense red color with intense aromas of fruit (black cherry, cassis) and spice (pepper, cinnamon and liquorice).

The palate is rich and concentrated, with fruity and spicy aromas. The long, round finish is typical of the Kailan region.

Great for enhancing duck breast, roast piglet, roast pork, spiced turkey, burgundy, roast beef, cheese.

There is no sulfur in the winemaking process. The traditional method is to place the harvest in concrete barrels without heating. Pre-fermentation chilled for 48 hours – unloaded/pumped/portioned/daily for 6 weeks, temperature controlled between 16°C and 27°C.

Aged in concrete vats for 10 months. There was very slight sulfite effect during bottling.

The grapes come from a vineyard located on a Miocene hillside north of the village of Cairanne, also known as the "Montagne du Ventabren". Erosion carved limestone pebbles containing rare chert into blocks that alternate with marls. The vines are sloping and face south, receiving plenty of sunlight.
