Pauillac de Latour 2007 is the third wine from Château Latour, a First Growth Bordeaux estate. Blended from approximately 70–80% Cabernet Sauvignon and 20–30% Merlot, it showcases classic Pauillac notes of blackcurrant, pencil shavings, and minerality, and has been hailed by many wine critics as "the best value third wine of the 2007 vintage."
🍷 Vintage Background and Winemaking Process
2007 Vintage Characteristics: 2007 was a "challenging vintage" for Bordeaux, characterized by a dry spring, a cool and rainy summer, but abundant sunshine in the autumn. The grapes achieved moderate ripeness and very high acidity, earning it the reputation of a "classic cool vintage" from many critics, exhibiting a pure, elegant, and early-drinking style.
Grape Origin: Selected from specific plots surrounding Château Latour (including young vines and vineyards dedicated to the three wines), the soils are predominantly gravelly and chalky, imparting elegant tannins and minerality to the wine.
Blending: Approximately 70–80% Cabernet Sauvignon (providing blackcurrant, pencil shavings, and structure) and approximately 20–30% Merlot (contributing red fruit and smooth tannins).
Oak Aging: Aged for 12–16 months in French oak barrels (approximately 20–30% new) to impart elegant layers of vanilla, cedar, and spice, while retaining pure fruit aromas.
👃 Tasting Notes
Color: A deep ruby-purple with garnet sheen, as brilliant as the afterglow of a sunset.
Aroma (Nose):
The aroma is complex and layered, exuding sweet fruity notes of strawberry jam, candy, caramel, smoke, blackcurrant, raspberry, and blueberry, interwoven with deep hints of pencil shavings, cedar, tobacco leaves, gravel, spices, chocolate, mocha, roasted nuts, brioche, honey, salted lemon, green apple, olive, roasted pineapple, biscuit, salted caramel, white chocolate, and licorice.
Palate:
Medium-bodied on the palate, the sweet flavors of blackcurrant, raspberry, blueberry, and strawberry jam are powerfully balanced by bright acidity. The mid-palate reveals a complex interplay of fine, smooth tannins, cedar, pencil shavings, mint, chocolate, spices, and minerality. The wine is elegant and refined, possessing both power and grace.
