Château Pavie Winery Introduction

Château Pavie is located in Saint-Émilion on the right bank of Bordeaux, France. It belongs to the Saint-Émilion Premier Grand Cru Classé A and is one of the most prestigious estates on the right bank. Managed by the Gérard Perse family, the winery's vineyards are primarily situated on limestone highlands and clay-limestone soils, known for its rich fruit flavors, fine tannins, and mineral tension.

Les Arômes de Pavie is the second label of Château Pavie, replacing the former name Château Tour Simard since 2005. It is primarily made from younger vines and fruit unsuitable for the grand vin, but is also produced and aged within the winery's system.

Les Arômes de Pavie 2021The 2021 vintage is a blend of 50% Merlot and 50% Cabernet Franc, with an alcohol content of approximately 14.44%. It was aged in French oak barrels, approximately 50% of which were new oak. The wine is a deep purplish-red in color, with concentrated and layered aromas of blackberry, black cherry, black plum, raspberry, violet, mint, blood orange, licorice, pepper, smoke, and a hint of charcoal.

On the palate, it is medium to full-bodied, with concentrated black and red fruit notes. The tannins are fine and structured; the acidity is crisp, bringing out limestone minerality and a savory flavor. James Suckling describes the wine as juicy, with aromas of nuts, berries, salty chocolate, and gunpowder, medium to full-bodied, with a slightly firm finish. He suggests it will be best enjoyed after 2028. The JS93 you mentioned is the rating for this 2021 vintage.
