Dom Pérignon Vintage 2006 Plénitude 2 (P2) is the flagship vintage champagne of the legendary Dom Pérignon, representing its second plénitude period. Blended from 55% Pinot Noir and 45% Chardonnay, it has been hailed by numerous critics as "one of the most elegant, minerally intense, and complex Dom Pérignon P2s of 2006," with Antonio Galloni (Vinous) awarding it a near-perfect score of 98–99 points.

🍾 Plénitude 2 (P2) Concept and Vintage Background

Plénitude 2 (P2) Concept: Dom Pérignon vintage champagnes undergo three plénitude periods:

P1 (First Plumping Period): After aging on lees for approximately 8–10 years, the lees are removed, revealing youthful vitality and pure fruit aromas.

P2 (Second Maturity): After aging on lees for approximately 15–16 years, the wine is discarded, showcasing depth, complexity, and mature flavors, often referred to as its "second life."

P3 (Third Maturity, formerly Oenothèque): After aging on lees for approximately 25–40 years, the wine is discarded, showcasing ultimate complexity and aging evolution.

2006 Vintage Characteristics: 2006 was a "sunny vintage" in the Champagne region, characterized by a cold winter, a frosty spring, but an extremely hot and dry summer. The grapes were exceptionally ripe and healthy, hailed by many critics as "one of the best vintages of the last decade," exhibiting a perfect balance of ripe fruit and bright acidity.

Grape Origin: Grapes are selected from 17 Grand Cru villages (the core appellations of Côte des Blancs and Montagne de Reims), comprising 55% Pinot Noir (providing ripe stone fruit and body) and 45% Chardonnay (offering citrus freshness and minerality).

Winemaking Process: No malolactic fermentation (Non-MLF) is used throughout the entire process to preserve natural acidity and pure fruit aromas; lees aging for approximately 15–16 years (disgorgement in 2021–2022), with a dosage of approximately 4.5 g/L (Brut level, one of the lowest in Dom Pérignon history).

Aging Potential: Aged for another 2 years after disgorgement before release, for a total aging time of approximately 17–18 years, exhibiting excellent long-term aging potential (up to 2040–2050).

👃 Tasting Notes

Color: Bright golden yellow with amber undertones and a matte finish; fine, dense, and persistent bubbles like pearls.

Aroma (Nose):

The aroma is extremely complex and layered, exuding sweet fruity notes of candied citrus, candied apricots, red apples, green apples, pineapple, mango, honeysuckle, and jasmine, interwoven with roasted hazelnuts, vanilla cocoa beans, licorice, cinnamon, flint minerals, gingerbread, Earl Grey tea, mint, white pepper, eucalyptus, beeswax, marzipan, and lemon syrup. Confit, baked apple tart, spices, chalky minerals, oyster shells, lime peel, blood orange, pink grapefruit, fig, cocoa, mocha, roasted nuts, brioche, honey, salted lemon, green apple, olives, roasted pineapple, biscuits, salted caramel, white chocolate, licorice, coffee, truffles, forest floor, tobacco leaves, pencil shavings, gravel, spices, chocolate, mocha, roasted nuts, brioche, honey, salted lemon, green apple, olives, roasted pineapple, biscuits, salted caramel, white chocolate, and a deep aroma of licorice.

Palate:

Full-bodied and well-structured on the palate, the sweet, ripe stone fruit (apricot, yellow peach, nectarine), candied citrus, lemon meringue, guava, and green apple flavors are brilliantly balanced by bright acidity. The mid-palate reveals a complex interplay of spices (white pepper, licorice, cinnamon), caramel pudding, roasted nuts, dark chocolate, Earl Grey tea, and a savory minerality. The mousse is creamy and smooth, possessing both power and elegance.

Finish:

The finish is exceptionally long and clean, leaving lingering notes of citrus peel, roasted nuts, chalky savory flavors, licorice, slightly bitter cocoa, smoky spices, salted lemon, lime, almond, and a minerally savory aftertaste. The overall impression is both sweet and savory, making it a wine with great potential for food pairing.
