🍾 Plénitude 2 (P2) Concept and Vintage Background

Plénitude 2 (P2) Concept: Dom Pérignon's vintage Champagnes undergo three maturation periods (Plénitudes):

P1 (First Maturation): After aging on lees for approximately 8–10 years, the wine is discarded, showcasing youthful vitality and pure fruit aromas.

P2 (Second Maturation): After aging on lees for approximately 15–16 years, the wine is discarded, showcasing depth, complexity, and mature flavors, often referred to as the "second life."

P3 (Third Maturation, formerly Oenothèque): After aging on lees for approximately 25–40 years, the wine is discarded, showcasing ultimate complexity and aging evolution.

2004 Vintage Characteristics: 2004 was a "challenging vintage" for the Champagne region, characterized by spring frosts, a cool and rainy summer, but abundant autumn sunshine. The grapes achieved moderate ripeness and exceptionally high acidity, earning it the reputation of a "classic cool vintage" from many critics, showcasing a pure, elegant style with excellent long-term aging potential.

Grape Origin: Grapes from 17 Grand Cru villages (the core appellations of Côte des Blancs and Montagne de Reims), comprising approximately 52% Pinot Noir (providing ripe stone fruit and body) and approximately 48% Chardonnay (offering citrus freshness and minerality).

Winemaking: No malolactic fermentation (Non-MLF) is used throughout the winemaking process to preserve natural acidity and pure fruit aromas; aging on lees for approximately 15–16 years (disgorgement in 2019–2020), with a dosage of approximately 4–5 g/L (Brut level). Aging Potential: After removing impurities, it will be aged for another 2 years before being released to the market, with a total aging time of approximately 17–18 years, exhibiting significant long-term aging potential (it can be aged until 2040–2044).
