🏰 Winery Background and Terroir Characteristics

Domaine Joseph Pascal: Founded in Puligny-Montrachet in 1950 by Jean Pascal, whose father, Joseph Pascal, previously worked at Domaine Leflaive, the winery is now run by the fourth generation of the family and is renowned for its combination of traditional Burgundy techniques with modern precision winemaking.

Aligoté Revival: Aligoté is Burgundy's second-largest white grape variety, long considered a "second-tier" variety. However, in recent years, due to climate change and consumers' pursuit of fresh, high-acid styles, it has been rediscovered by several winemakers, showcasing a pure mineral and citrus style distinct from Chardonnay.

Terroir Origin: The grapes come from Régionale vineyards in Burgundy, with soils primarily composed of clay-limestone, giving the wine bright acidity and chalky minerality.

Color: A bright, pale golden yellow with a hint of green, as clear as spring sunshine.

Aroma: The aroma is fresh, pure, and layered, exuding the crisp fruitiness of fresh lemon, lime, grapefruit, green apple, and tropical fruits (pineapple, kiwi), interwoven with deeper notes of acacia blossom, honeysuckle, white pepper, crushed stones, and a hint of almond.

Palate: Light and crisp on the palate, fresh citrus acidity (lemon, lime) and green apple flavors unfold first, accompanied by bright natural acidity and chalky minerality.

The mid-palate reveals complex layers of stone fruit (white peach, nectarine), honey blossom, and delicate herbs (mint, eucalyptus). Medium-bodied, clean and crisp, with very low sweetness, it is highly invigorating.

Finish: The finish is clean and refreshing, leaving a lingering aftertaste of citrus peel, green apple, chalky saltiness, and a hint of almond. Overall, it is refreshing and crisp, with excellent food pairing potential.
