Domaine Les Frères Mignon L’Aventure
Domaine Les Frères Mignon L’Aventure is a Premier Cru Blanc de Blancs Extra Brut Champagne from the Côte des Blancs in Champagne. The house is run by brothers Florent and Julien Mignon, who left the local cooperative in 2014 and produced their first vintage in 2016. They farm certified organic vineyards in Cramant, Avize (both Grand Cru) and Cuis (Premier Cru), with old vines averaging around 50 years.
Vinification & Style
Made from 100% Chardonnay, sourced from three plots: Avize and Cramant (Grand Crus) and Cuis (Premier Cru). The wine is fermented with indigenous yeasts, sees no malolactic fermentation, and is aged on lees for around 26 months. Dosage is very low, typically 1.6–3.2 g/L, classifying it as Extra Brut. The style is precise, chiselled and mineral-driven, with vibrant acidity, citrus purity and a chalky, saline finish.
Tasting Notes
Colour: Pale lemon yellow with fine, persistent bubbles.
Nose: White flowers, citrus zest, green apple, lemon curd, gardenia, with subtle buttery pastry and chalky notes.
Palate: Lemony brightness, green apple, candied citrus, with a pillowy yet precise texture. Racy acids, chalky minerality and a tangy, mouthwatering finish. Creamy texture develops as it warms.
Finish: Long, mineral and focused, with lingering citrus and saline notes.

Decanting: No decanting required; open 10–15 minutes before serving.
Serving temperature: 8–10°C.
Food pairing: Oysters, raw bar, sushi, sashimi, grilled seafood, delicate fish dishes, roast chicken, soft cheeses such as Brie or Chaource, and light appetizers. Also pairs well with creamy lobster preparations and Japanese food.
Drinking Window
Enjoy from now through approximately 2029–2034. With bottle age, the wine should develop more honeyed, nutty, brioche and mineral complexity while retaining freshness and energy.
