Domaine Paquet Winery Introduction

Domaine Paquet (commonly labeled Domaine Jean-Paul Paquet or Famille Paquet) is located in Davayé, Mâconnais, Burgundy, near Pouilly-Fuissé. Founded by Jocelyne and Michel Paquet, the winery is currently managed by the next generation. It owns approximately 30 hectares of vineyards, 8 hectares of which are located in prime Saint-Véran plots, some dating back to 1956.

The winery is situated beneath the limestone cliffs of Solutré and Vergisson, with clay-limestone soils ideal for Chardonnay grapes. The Paquet family also produces wines in Saint-Véran, Pouilly-Fuissé, and Bourgogne Blanc, among other appellations, known for their fresh fruitiness, minerality, and balance.

2023 Vintage Overview

Domaine Paquet Saint-Véran 2023 is made from 100% Chardonnay grapes sourced from various plots within the Saint-Véran appellation, with vines averaging 25–35 years old. The 2023 Burgundy vintage was generally warm, resulting in well-ripened Chardonnay grapes from Mâconnais, exhibiting concentrated fruit flavors while maintaining a refreshing acidity.

In terms of winemaking, approximately 70% fermented in stainless steel tanks and 30% in old oak barrels, using only natural yeasts and completing malolactic fermentation. The wine was then aged on its lees for several months to enhance texture and complexity while preserving fresh fruit and minerality. This approach prevents the wine from becoming overly oaky, instead prioritizing fruit, acidity, and texture.

The aromas are dominated by green apple, pear, lemon peel, white peach, and citrus, with hints of acacia, honeysuckle, honey, almond, and subtle minerality. Medium-bodied on the palate, with fresh and concentrated fruit flavors and bright acidity, a smooth mid-palate with a slight creaminess, and a clean, savory finish with a chalky minerality.

The 2023 Saint-Véran is generally described as a "fresh, concentrated, easy-drinking, and textured Mâconnais Chardonnay." The Paquet version achieves a good balance between fruit purity, acidity, and minerality, making it suitable for drinking young, but also suitable for short to medium-term aging.
