Introduction of Chichibu Distillery
Chichibu is located about 100 kilometers northwest of Tokyo, on a small hill about half an hour's drive from downtown Chichibu. The region faces extreme weather conditions, with hot and humid summers and -10 degrees Celsius in winters. The Chichibu Distillery was established in 2004 and was run in 2008 by Mr. Ichiro, the grandson of the founder of the closed distillery, Hanyu Distillery. After working at Suntory, Ichiro decided to create a brand of 100% Japanese whisky, from barley to wood. A small portion of the barley used in Chichibu is malted on site. But most of their non-wheat comes from England and Germany, while barley is imported from Scotland. Different cask types are used for maturation such as sherry, port, marmalade, bourbon and even French casks.
