Jasper Hill Winery Introduction

Jasper Hill Vineyard, located in Heathcote, Victoria, Australia, is one of the most representative Shiraz wineries in the region. Founded in 1975 by Ron and Elva Laughton, Georgia’s Paddock is named after their daughter, Georgia. The winery employs low-yield, dry-cultivation, and minimal-intervention methods to highlight the unique terroir of Heathcote.

Georgia’s Paddock vineyard is built on ancient Cambrian basalt soils. The vines are primarily self-rooted, relying on natural rainfall for growth without irrigation. According to official winery data, the earliest Shiraz vines were planted in 1975, with some additions in 1987, resulting in approximately 10 hectares of low-yield Shiraz.

2024 Vintage Description

The 2024 Georgia’s Paddock Shiraz is a typical and mature Heathcote Shiraz, showcasing Jasper Hill's consistent depth, power, and natural balance. The wine is a vibrant magenta color, with aromas dominated by full-bodied red fruits, gradually revealing layers of dark plum, chocolate, and spices.

On the palate, the wine is full-bodied yet lively, with abundant red and blackberry flavors, complemented by dark plum, chocolate, and a hint of earth. The tannins are soft and chalky, with a well-structured yet not harsh character; the 15.5% alcohol content is well-integrated, without an overly abrupt heat. The winery describes this vintage as both enjoyable now and confidently possessing aging potential.

In terms of winemaking, the grapes are completely destemmed, fermented using natural yeasts, and macerated with the skins for approximately 5 to 6 weeks. Afterward, it is gently pressed and aged in French oak barrels for 12 months. This process helps extract depth and tannins while preserving the minerality and fruit vibrancy of the vineyard.
