Established in 2005, Kilchoman was the first new distillery to be built on Islay in 124 years and one of the few whiskey distilleries in Scotland to remain independent and produce whiskey in the traditional way.
Global launch of "Cognac and Fino Sherry Matured", the newest and first ever cognac cask aged, Kilchoman has been released after 6 years in cognac casks from Tonnellerie Bossuet .
Tonnellerie Bossuet is family run (father and son) with a heritage of over a century. They have become a leading name in the cooperage industry, supplying casks to distilleries, distilleries and spirit producers around the world. The cooperage in Cognac produces barrels from Tronzai and Limousin oak. Tronçais develops a softer taste as it ages due to the lighter tannins in the oak, while Limousin is more robust due to its heavier tannins. This proves once again that the flavor and impact of oak can vary depending on its origin and structure.
The maturation of fino sherry fits well with the classic Kilchoman character. Released in 2023, this wine elevates the aromas of green apple, stewed fruit and sweet citrus, while keeping the unmistakable Kilchoman peat smoke lingering on the palate. Fino is another example of sherry casks complementing rather than contradicting the spirit of Kilchoman. said Kilchoman founder Anthony Wills.
Fino Sherry is a light, dry Sherry wine native to the Jerez region of southern Spain. Fino is made from the Palomino grape variety. Since Fino is more delicate than Oloroso or Pedro Ximénez, the grapes used to produce Fino are grown in good quality soils, such as chalky Al Barisa Marl. Once the grapes are ready to be harvested, they are picked and fermented into a light wine, which is then fortified with distilled spirits to around 15% alcohol. It is then aged under a layer of yeast known as "velo de flor" to prevent contact with the air, thereby minimizing the risk of oxidation. The casks used in the aging process are American oak barrels stored in the cellar using the traditional solera system. The average maturity period is 4 to 7 years. When Kilchoman uses these casks to mature our spirits, the yeast, pasta and almond flavor profiles are easily recognizable, while also delivering rich brine flavors and fresh herbs. It adds the tangy spiciness and buttery texture we've come to expect from a high-end cognac, while retaining the softer peaty smoke of Cheyholmen. On the finish, dried fruit, marzipan and licorice wood create a complex and persistent impression.
