Winery Background

Patrick Piuze is one of Chablis's most esteemed négociant-vignerons. Born in Canada, he has long been deeply involved in Chablis, collaborating with top grape growers. His style emphasizes terroir identification, using natural yeast fermentation and aging in stainless steel and old oak barrels to give the wine texture without masking the terroir.

Butteaux, located on the left bank of Chablis and belonging to the Montmains Premier Cru, is often considered one of the most prestigious plots in the region. Patrick Piuze describes it as the best terroir on the left bank; its approximately 75-year-old vines are rooted in chalky Kimmeridgian limestone and clay, contributing concentration, texture, and a distinct marine minerality to the wine.

Tasting Notes: Aromas include dried white flowers, white peach, nectarine, ripe pear, green apple, lemon peel, citrus oil, and a touch of fresh bread, along with hints of flint, chalk, oyster shell, iodine, and a minerality reminiscent of sea breeze.

Medium to full-bodied on the palate, with a silky, rich, and concentrated texture; beneath the flavors of ripe stone fruit and citrus lie salty, chalky, and stony lines. Although 2022 was a relatively warm year, Butteaux, thanks to its deeper clay, still maintains a distinct acidity and tension, with a long, lingering finish that leaves a pleasant, almost salivating feeling.
