Winery and Plots

Patrick Piuze is one of the most representative terroir-focused négociant-vignerons in Chablis, emphasizing collaboration with top growers and using natural yeast fermentation, low-intervention methods, and aging in old barrels/stainless steel to showcase the pure character of each plot.

Côteau de Fontenay is located on a sloping plot near Grand Cru Les Preuses/Bougueros and 1er Cru Vaulorent. The vineyard is situated on higher ground with a cooler orientation, and the soil is typical Kimmeridgian limestone. This plot is generally considered one of the more structured, mineral-rich, and well-aged village-level Chablis from Piuze.

2017 Vintage
The 2017 Chablis vintage was affected by frost at the beginning of the year, resulting in lower yields. However, the subsequent growing season was successful, with healthy grapes and ideal ripeness. Piuze describes 2017 as close to 2014: fresh, sculpted, and very classic Chablis style, with a sugar content of about 11.8–12.2° at harvest, resulting in wines with bright acidity and low alcohol content.
