Suntory 木桶仕込1981 直火蒸餾 Pure Malt Japanese Whisky is a rare, discontinued pure malt whisky from Suntory, distilled in 1981 using traditional Japanese techniques.

It primarily blends spirits from Yamazaki and Hakushu distilleries , fermented in wooden vats called "Kioke Shikomi" instead of modern stainless steel for added woody depth. The direct-fire distillation method creates a fuller-bodied spirit compared to indirect heating, though it's challenging to control; production stopped in 1999 due to complexity and low yield.

Tasting Notes

Expect a pale golden color with aromas of nutmeg, butter, dried grass, smoke, oak, and green apple. The palate brings malty sweetness, subtle peat or smokiness, candy hints, white pepper, and a robust "northern Highland" style, finishing grainy, sweet, and lengthy.
