Description
Thomas Pico Domaine Pattes Loup Chablis (Mise Tardive) 2022 is a signature green-style Chardonnay from Chablis, Burgundy, France. Made by the modern winemaker Thomas Pico using organic/biodynamic methods and a "long aging, delayed bottling" approach, it's perfect for those who appreciate high acidity, minerality, and a distinct terroir.
Vineyards: Chablis Kimmeridgian limestone clay terroir; vines average 35–40 years old, with some reaching 50–70 years. Planted at high altitudes on cool, well-ventilated slopes in Courgis and Préhy.
Winemaking: Organic/biodynamic farming, hand-picked and hand-selected, fermented with wild yeasts. Approximately 40% is fermented and aged in concrete egg tanks, with the remainder in stainless steel vats. No oak barrels are used throughout the process, emphasizing the original fruit flavors and minerality.
Mise Tardive Concept: The wine is aged in stages on its lees in the cellar for an extended period, typically at least two years, to allow for a more rounded and multi-layered body while retaining strong acidity and a distinct minerality.

Aroma: Lime, grapefruit, citrus peel, lemon verbena, fresh herbs, sea salt, minerals, white flowers, with a hint of smoke/flint. Overall, very clean and transparent.
Palate: Fresh and firm acidity, tight yet supple structure, with citrus, white peach, green apple, sea salt, minerals, and a slight saltiness in the mid-to-late stages. Medium-light body with a long, savory finish, suitable for pairing with food.
