新政 Private Lab「亞麻貓」白麴仕込 720ml，係新政酒造實驗性系列 Private Lab 中最具個性嘅作品之一。佢以釀燒酎常用嘅白麴製麴，帶來大量檸檬酸，做出高酸、明亮、柑橘感強烈嘅純米酒，同一般清酒嘅甜酸結構明顯不同。

「白麴」一般用於燒酎釀造，能產生較多檸檬酸。新政將佢引入清酒製麴，令「亞麻貓」擁有明顯高酸度、爽快柑橘風味，口感比典型清酒更接近酸爽果味酒，並非加咗檸檬或柑橘汁，亦唔係貴釀酒；佢嘅酸味主要來自白麴發酵產生嘅檸檬酸。官方亦形容佢為新政最具個性嘅作品之一。


香氣：清爽果味與柑橘系香氣，帶少許木桶氣息，整體輕盈。

入口：酸度非常突出，有檸檬、柑橘般鮮明感；甜味較低，唔係濃甜果香型。

中後段：米旨味相對內斂，主要作用係平衡酸度；木桶發酵令酒體帶少許柔和質感。

收結：乾淨俐落、酸爽持久，適合喜歡白酒、低甜果酒或高酸度風格嘅飲家。
