水端 1355 500ml

油長酒造全新銘柄「水端」，100%復刻古法釀製讓大家喝到數百年前的日本酒風味，根據1355 年的釀造記錄，作品以此年份命名，象徵回到日本酒發源地奈良・菩提山正歷寺的古老技法。

使用大型陶甕（約 3 石釀造量）發酵，在專用酒藏「享保藏」內釀造，強調器皿與空間對風味的影響。

透過這個品牌訊息，「水端」希望讓顧客觸碰日本酒深厚的歷史，品嚐到滲透五臟六腑、具備深度層次的風味。

與現代冬造相反，水端 1355 在盛夏、氣溫超過 30 度下釀造，令糖化與發酵非常旺盛，帶來高濃度的糖與酸並存的酒質結構。

酒體顏色呈香檳金甚至略帶混濁的色澤，反映長時間高溫發酵、麴與乳酸由來的色度，以及近似熟成酒、味醂的視覺印象。

散發出蜜餞、龍眼乾、焦糖、熟成味醂、蜂蜜、糯米糕、乳酸系優格、木質與穀物香交織，帶強烈古酒感與菩提酛特有乳酸氣息。酒體明顯濃稠，入口強烈的米糖甜味與高酸度同時湧現，形成厚重卻不失立體度的結構。

可以感受到糯米般黏密質感、乾果與焦糖調、以及菩提酛帶來的複雜有機酸，尾段帶少許苦味、茶感與烤麵包／木皮般的細緻澀感，餘韻悠長。
