使用6號酵母「新政酵母」：
酵母6號是在1930年由國家稅務局工程師 - 小穴富司雄氏先生發現的，比7號酵母發現16年。
是在釀造秋田的新政清酒釀酒廠中發現的。
發現的聯合酵母，所有這些都被發現是6號基因突變。

風之森生產的 6 號酵母具有很強的低溫發酵能力。
我想向您介紹新政酒造 的佐藤祐輔先生，我有幸與他在過去的10年裡加深了友誼。

我們收到了 6 號酵母，並將 20 年來首次使用 6 號酵母作為風之森。並發行「風の森ALPHA6 6号への敬意」。

由於酵母在低溫下也能保持活性的特性以及我們獨特的發酵罐，
醪在低溫下長時間發酵，以帶出濃鬱的風味成分。
此外，得益於金剛葛城山脈的超硬水，酒液質地濃稠，味道溫和，在口中縈繞不去。


有青瓜、葫蘆絲般的溫柔醇香，口感帶溫柔的甜味和酸味在你的舌頭上蔓延。質地柔軟、香氣濃鬱。
