來自日本秋田縣歷史悠久的飛良泉本舖，由第27代藏元齊藤雅昭先生打造的新品牌系列。這系列堅持使用傳統的山廢純米釀造法，結合現代釀酒理念，旨在創造出既尊重傳統又具有新風貌的清酒。

「山廢ｘ高精白ｘ77號酵母」

此款酒屬於飛囀Hiten系列中的CRAFT SAKE WEEK限定品。是HITEN系列首次採用高精白技術，將大米精磨至35%的純米大吟釀酒。

其細膩而豐富的酸甜層次，被視為專為嗜酸愛好者打造的山廢純米吟釀清酒。此酒以獨特的三重酸結構著稱，包含白麴產生的檸檬酸、77號酵母帶來的蘋果酸和山廢酛中的乳酸，酸度鮮明且層次豐富。

帶有蘋果般的清甜香氣及乳酪般的柔滑口感，入口清爽且酸味濃郁，卻不失平衡與柔和，餘韻乾淨。酒體透明輕盈酸甜平衡感極佳，餘韻乾淨且舒適。特別適合冷飲，能完美搭配西餐及各類和風料理。
