秋田 飛良泉本舗 的「飛良泉 飛囀Hiten 鵆Chidori 貴釀酒」是特別限定作品，作品以山廢配上白麴，再在三段仕込中的留添階段加入了自家的山廢純米酒代替仕込水，釀造成風味甜潤的貴釀酒作品。

「山廢ｘ白麴ｘ貴釀酒」

山廢技術為作品帶來深度、結構和圓潤的乳酸，而白麴則帶來更清爽的檸檬酸，再加相熟成四年後，各風味更為圓潤調和，甜潤中帶平衡的酸度。「77號酵母」能夠產出高蘋果酸的高酸度酵母

甜味濃郁卻不膩，融合了鮮明的酸味，帶來青蘋果、紅蘋果、蜜糖、焦糖與香草香氣，口感滑順帶有優格般的清爽風味，還有柑橘般白麴酸度和香草、香茅香氣，質地豐厚圓潤，尾韻為烤果仁味，屬於濃厚且有層次的現代感日本貴釀酒。

適合冰鎮後用紅酒杯享用，無論是搭配和食或西餐都超搭。釀酒廠第27代釀酒師表示，自己試飲時一個人能輕鬆喝掉好幾瓶，口感難以抗拒。
