來自日本秋田縣歷史悠久的飛良泉本舖，由第27代藏元齊藤雅昭先生打造的新品牌系列。這系列堅持使用傳統的山廢純米釀造法，結合現代釀酒理念，旨在創造出既尊重傳統又具有新風貌的清酒。

「山廢ｘ白麴ｘ77號酵母」

此酒最特別的是它結合了三種酸味來源：白麴產生的檸檬酸、協會77號酵母帶來的蘋果酸，以及山廢酛中的乳酸，形成層次豐富且鮮明的酸度結構。它入口帶有細膩的甜味，隨後中段會爆發出清冷且層次分明的酸度，最後以圓潤溫和的乳酸風味收尾，呈現出清爽且酸味鮮明的飲感。

酒體輕盈爽口，餘韻帶有甜美層次，酸度極為鮮明而平衡，適合夏天冰鎮飲用，也能搭配各種日式料理如壽司、生魚片，以及烤物。該款酒在飛囀系列中以酸味設計出名，屬於感官體驗豐富且極具個性的精品.
