水端 1355 500ml

油長酒造全新銘柄「水端」，100%復刻古法釀製讓大家喝到數百年前的日本酒風味，根據1355 年的《御酒之日記》記載嘅寺院夏季釀造技術，以高溫發酵及「菩提酛」概念打造，作品以此年份命名，象徵回到日本酒發源地奈良・菩提山正歷寺的古老技法。

使用大型陶甕（約 3 石釀造量）發酵，在專用酒藏「享保藏」內釀造，強調器皿與空間對風味的影響。

露葉風作為酒造好適米有較高溶解性；即使在 2025 夏季高溫發酵下，仍能令糖化與發酵取得平衡。到醪後期外界溫度下降，發酵得以緩慢完成，因此 2025 版比往年甜感較輕、感覺更水潤，但同時有露葉風與高溫釀造帶來的強勁酒體及厚實酸度。

色澤：淡金至香檳金色，較一般清酒深色。

香氣：乳酪、優格、發酵水果、焦糖、穀物、米麴、熟成味醂；也可能帶柚子、香蕉或熟蘋果般氣息。

口感：低酒精但濃度感高，先有柔和甘甜，接住是濃厚旨味、乳酸感與高溫發酵帶來的野性複雜度。

尾韻：2025 版甜感更輕盈、水潤；酸度厚實、帶些微澀感與礦物感，令整體不會甜膩。
