水端 1568 2025版 500ml

（具 3–5 年冷藏熟成潛力）

油長酒造全新銘柄「水端」，100%復刻古法釀製讓大家喝到數百年前的日本酒風味，根據1568年《多聞院日記》記錄，重現室町時代冬季釀造技術的限定純米酒。使用大甕和現代酒釀製作中使用的三段式釀造技法，在冬季低溫發酵，製造出高品質的奈良酒。

透過這個品牌訊息，「水端」希望讓顧客觸碰日本酒深厚的歷史，品嚐到滲透五臟六腑、具備深度層次的風味。

2025 年版刻意追求成熟蜜瓜、青瓜／瓜類嘅青綠香氣。由於釀造期比往年更冷，酒造略為調高仕込み溫度，令米粒溶解得更完整；成酒有成熟蜜瓜般甜香、水端特有的豐富有機酸，但尾段比想像中更輕快、俐落。

香氣：成熟蜜瓜、青瓜、青蘋果，配乳酪、優格、米麴、杉木及少量雲呢拿氣息。
口感：中等至偏飽滿，有柔和甜味、濃郁旨味與乳酸感；質地可帶少少黏稠、圓潤感。
尾韻：礦物、微澀、輕微苦感與有機酸，將味道拉得更乾淨；2025 版尤其強調輕盈俐落收結。
